While the kids are learning from home, you might as well treat them (and yourself) for some fun breakfast bites to munch on while in their virtual homerooms! These breakfast bites all can be made in a muffin tin, and can fuel the crew for a few days!

 

Hashbrown Omelet Breakfast Bites

Ingredients

36 tater tots, thawed

6 eggs

½ c milk

1 c shredded cheddar cheese

½ c spinach, chopped

Salt and pepper to taste

 

Directions

  1. Preheat oven to 350 and grease your muffin tin generously.
  2. Press 2-3 tater tots into the bottom of each muffin well, creating a base.
  3. Whisk eggs, milk, salt, and pepper, then pour mixture into each muffin well. Top with cheddar cheese and spinach.
  4. Bake for 15-20 minutes and let cool for a few minutes before serving!

 

Crescent Breakfast Bites

Ingredients

½ package of Uncle Charley’s Breakfast Links, crumbled

1 8-oz can of crescent dough

4 large eggs, beaten

1 c shredded mozzarella cheese

1 c ricotta cheese

1 c finely chopped chives

Salt

Cayenne 

 

Directions

  1. Preheat oven to 375. In a skillet, brown the sausage crumbles, then drain and set aside.
  2. Grease muffin tin, then roll out crescent roll dough onto a lightly floured surface. Cut into 24 squares and place into muffin tin slots (will need two tins).
  3. In a large bowl, combine eggs, cheese, chives, and sausage crumbles thoroughly, then season with salt and cayenne. Spoon evenly into muffin tin slots.
  4. Bake for 15 minutes, let cool, then serve.

 

Sausage and Pancake Breakfast Bites

Ingredients 

2 c pancake mix

½ c water

2 t vanilla

1 package of Uncle Charley’s Maple Breakfast Links, cut into coin-size pieces

 

Directions

  1. Preheat your oven to 350 degrees and grease your muffin tin.
  2. In medium bowl, mix pancake mix, water, and vanilla as you would for normal pancakes. 
  3. Scoop batter into muffin tin, filling each slot about ¾ of the way. Then, press sausage coins into each cup.
  4. Bake 15-20 minutes and then enjoy! Don’t be scared to add a little maple syrup and eat with a knife and fork 😉

 

Sausage and Cheese Muffins

Ingredients

1 package of Uncle Charley’s Spicy Italian Sausages, curmbled

1 can of condensed cheddar cheese soup, undiluted

½ c whole milk

2 t rubbed sage

3 c biscuit/baking mix

 

Directions

  1. Preheat oven to 400. In a skillet over medium heat, brown sausage crumbles, then drain.
  2. In a bowl, combine milk, soup, sage, and baking mix.
  3. Grease muffin tin wells, then pour mixture evenly into them.
  4. Bake muffins for 15-20 minutes and enjoy!

 

Mini Sausage Quiches

Ingredients

1 c butter, softened

6 oz cream cheese, softened

2 c flour

½ package of Uncle Charley’s Breakfast Links, crumbled

1 c swiss cheese, shredded

1 large egg

1 ½ c of half-and-half cream

Salt and cayenne to taste

 

Directions

  1. Preheat oven to 375. Beat butter, cream cheese, and flour until smooth. Shape into 36 small balls and press into the bottom and sides of a greased mini-muffin tin’s wells.
  2. In a large skillet, brown sausage and drain. Sprinkle sausage and cheese into muffin cups. Beat eggs, cream, and salt and cayenne, then pour into muffin cups.
  3. Bake 28-30 minutes to properly brown bottoms, let cool, then serve.

 

Huevos Rancheros Bites

Ingredients

2 eggs, beaten

½ a package of Uncle Charley’s Tex Mex Sausage, crumbled

1 onion, finely chopped

1 red bell pepper, finely chopped

1 c shredded Mexican cheese

Salsa

Sour cream

 

Directions

  1. Preheat oven to 350 and grease muffin tin. Brown sausage in a skillet over medium heat, then drain.
  2. Combine eggs, sausage, onion pepper, and cheese, then pour mixture into muffin tin wells.
  3. Bake for 25-30 minutes, then serve with your choice of salsa and a dollop of sour cream!

 

Sweet Potato and Sausage Muffins

Ingredients

¾ c sugar

¾ flour

½ c old fashioned oats

1 ½ t all-spice

½ t salt

½ t baking soda

1 c mashed sweet potatoes

2 large eggs, beaten

¼ c butter, melted

¼ c canola oil

¼ maple syrup

1 package of Uncle Charley’s Pork Sausages, crumbled

 

Directions

  1. Preheat oven to 350. Brown sausage crumbles in a skillet over medium heat, then drain.
  2. In a bowl, combine the sugar, flour, baking soda, oats, all-spice, and salt. In another bowl, combine eggs, sweet potatoes, butter, canola oil, and maple syrup. Stir in dry ingredients, then fold sausage into the mixture.
  3. Spoon mixture evenly into greased muffin tin. Bake for 25-30 minutes, then let cool and enjoy!

 

Once you’ve baked your breakfast bites and gotten the kids settled, play a game with them! Set up a tic-tac-toe board and when your bite is knocked off of it, you can eat it. Or quiz them on their spelling and history, for every right answer they get another bite! For an even more interactive activity, have your kids help make the muffins!
