Back to School! Morning Meals for Your Kids

No matter what your child’s morning routine looks like this school year, they need fuel for their day! What’s a better way to start their day than with some Uncle Charley’s Breakfast Links?🍴

Sausage and Veggie Scramble

Kick start the morning by hitting all the food groups with this quick and easy sausage and veggie scramble! 

Ingredients

Two Uncle Charley’s Breakfast Patties, crumbled

¼ red bell pepper,

¼ c onion, chopped

2 eggs, beaten

¼ c cheddar cheese

Salt & pepper

Directions

  1. Throw your crumbled Uncle Charley’s Breakfast Links into a skillet and brown.
  2. Once fully browned, drain out the fat and remove the sausage. Sauté your onion and bell peppers for about 3 minutes, until softened. 
  3. Add the eggs, spinach, tomatoes, and cheese, beginning to scramble.
  4. As the eggs begin to solidify, add the sausage back to the skillet and finish off with a pinch of salt and pepper! If you want to give it an extra kick, top with some hot sauce. 🌶️

 

Breakfast Burrito

Another quick (and portable!) option is a breakfast burrito. You can even make it the night before and just reheat in the morning! 

Ingredients

1 Uncle Charley’s Breakfast Links, crumbled

1 large flour tortilla

½ potato

¼ c cheddar cheese

¼ onion

½ c red bell pepper

Olive oil

Salt & pepper

Directions

  1. Brown the crumbled sausage in a skillet, then drain and set the sausage aside.
  2. In the same skillet, fry your potatoes with some olive oil, salt, and pepper.
  3. Once potatoes are thoroughly cooked, set aside with the sausage.
  4. Sauté the onion and bell pepper for 3-4 minutes, until softened.
  5. Wrap all of the ingredients up in the large tortilla with the cheese and place in a tupperware to microwave in the morning! 🌯

 

Breakfast Casserole

If you’re into meal planning and want to have breakfast prepped for the whole week in one go, this breakfast casserole is the answer! It’s fairly easy to get together and then you’ll have a nutritional breakfast to keep everyone going. 🙌

Ingredients

One package of Uncle Charley’s Breakfast Patties, crumbled

12 eggs

1 c sour cream

¼ c milk

Salt & pepper

4 green onions

½ green bell pepper, diced

½ red bell pepper, diced

2 c shredded cheddar cheese

Directions

  1. Preheat your oven to 350 degrees and spray a 9×13 pan with cooking spray.
  2. Mix the eggs, cheese, sour cream, milk, salt, and pepper in a large bowl until just combined.
  3. Toss the crumbled breakfast links into a skillet over medium heat. Cook until browned, drain the fat from the skillet, and add the sausage to your egg mixture.
  4. Put the bell peppers and onion into the skillet you just used for your sausage and sauté for a few minutes, then add to the egg mixture. Combine everything and pour the mixture into your baking pan.
  5. Bake for 35-40 minutes, until the center is just jiggly and the edges nicely set. Enjoy all week!
