CELEBRATING NATIONAL SOUP MONTH: SOUP RECIPES FOR THE SLOW COOKER

Great soup doesn’t have to be an intensive process! Get those incredible flavors using your slow cooker, leaving more time for snowball fights, Hallmark movies, and being with your family 🤗

 

Sausage, Spinach, and White Bean Soup

This may be the easiest soup you ever make. It’s incredibly hands off, light, and packs a lot of flavor – what more could you want on a cold winter’s night?! 

 

Ingredients

1 T olive oil

1 package of Uncle Charley’s Kolbassi Grillers, sliced into coin sized pieces

3 cloves of garlic, minced

1 onion, diced

3 carrots, diced

2 stalks of celery, diced

2 15-oz cans of Great Northern beans, drained

½ t dried oregano

2 bay leaves

4 c chicken broth

3 c baby spinach

Salt and pepper, to taste

 

Directions

  1. Brown kolbassi in a skillet over medium-high heat with olive oil.
  2. Stir sausage, garlic, onion, carrots, celery, oregano, bay leaves and beans into chicken broth in slow cooker. Season with salt and pepper as needed.
  3. Cook on low heat for 7-8 hours or high heat for 3-4 hours.
  4. When ready to eat, remove bay leaves, stir spinach in until wilted, and serve.

 

Potato and Sausage Soup

Looking for a heartier soup after a day of shoveling snow or business calls? This tomato-based soup will warm your soul and fill your belly.

 

Ingredients

1 onion, diced

1 T butter

1 package of Uncle Charley’s Italian Sausages

3 cloves of garlic, minced

1 stalk of celery, chopped

1 carrot, chopped

1 large potato, peeled and diced

3 c cabbage, coarsely chopped

1 ¼ corn

4 c beef broth

2 c water

2 T tomato paste

1 bay leaf

½ t basil

½ t oregano

¼ t dill

15 oz diced tomatoes with juice

1-2 T corn starch

 

Directions

  1. Cook onion, garlic, celery, and sausage in a skillet over medium heat until onion is tender.
  2. Add all ingredients except tomatoes and cornstarch to slow cooker. Cook 4-5 hours on high or 8 hours on low.
  3. Stir in tomatoes with juices and corn starch, let simmer for another 10 minutes.
  4. Remove the bay leaf and serve.

 

Zuppa Toscana

Are you craving a creamier, comforting soup to serve for dinner? Missing going out to restaurants, perhaps? We don’t have a recipe for breadsticks on hand, but we do have one for zuppa toscana!

 

Ingredients 

1 package of Uncle Charley’s Spicy Italian Sausages

6 slices of bacon, chopped

1 onion, chopped

5 cloves garlic, pressed or minced

1 t oregano

½ t pepper

1 lb potatoes, sliced ¼-in thick

4 c chicken broth

3 c coarsely chopped kale

1 c heavy cream

 

Directions

  1. In a skillet, brown onion, sausage, and bacon until onions are slightly softened. Add to crock pot with garlic, oregano, and pepper, then stir.
  2. Add potatoes and broth, stir, and cook on high for 3.5 hours or low for 7 hours.
  3. When cook time is up, stir in kale and heavy cream. Let cook for another 10-15 minutes, then serve with shredded parmesan and freshly ground pepper on top.
