Griller Sandwich With Red Pepper Mayo.

INGREDIENTS.

  • 1 pkgUncle Charley's Hot or Sweet Italian Sausage
  • 1 jarRoasted Red and Yellow Peppers with Garlic and Olive Oil (Peppers in water are ok as well)
  • 2 tbspMayo
  • 1/2 tspLemon juice
  • 1 LargeOnion (Sliced)
  • 1 tbspChopped Cilantro

INSTRUCTIONS.

  1. Cook sausage links on the grill along with onions (see tip below).
  2. Prepare mayo by adding peppers to a food processor or blender with the mayo and lemon juice. Sprinkle with a dash of salt and pepper.
  3. Blend peppers with mayo until well blended. Taste and season with salt and pepper to preference.
  4. Chill mayo until ready to use.
  5. To assemble sandwiches begin by placing a little of the mayo in the bun before adding the sausage. Add sausage and smear a little more mayo before adding the grilled onions.
  6. Garnish with cilantro and serve.
Tip Grill onions using a grill proof basket or slice in rings to make sure they do not fall through the grill grates.
