Herb Roasted Parmesan Acorn Squash.

  • 1 largeAcorn Squash
  • 1/3 cupsShredded Pamesan Cheese
  • 2-3 Tbsp.Herbs de Provence
  • 1 Tbsp. meltedButter
  • 1/2 Tsp.Garlic Powder
  • 1/4 Tsp.Salt
  • 1/8 Tsp.Black Pepper


Preheat oven to 400 degrees. Cut squash in half and scoop out seeds. Cut each half into ½-in thick slices. Combine all ingredients in a large bowl and toss to combine. Transfer to a large sheet pan and sprinkle parmesan cheese onto squash slices. Bake for 25min and garnish with more parmesan and herbs.
