TIME TO EAT CONTEST WINNING RECIPE “DID SOMEONE SAY SAUSAGE PIEROGIES”

The creativity of our next “Time to Eat” contest winner quickly grabbed our attention and awakened our taste buds. An appetizer for any occasion, Betty’s recipe combines 2 local favorites, Uncle Charley’s Sausage and Pierogies! You better believe with football season right around the corner this pairing is sure to be a hit at your next tailgate, BBQ, or party.

RECIPE: Hot Sausage Pierogi Appetizer

DIRECTIONS:
MAKE FILLING FIRST:
Pierogi Dough:
2 1/2 Cups Flour
1t salt
1t baking power
1/2 Cup Sour Cream
1 egg
1/4 melted butter

Place all ingredients in a food processor and pulse until you a have dough.

Dump dough that looks large chunks on a board and knead until dough comes  together.  Let rest for about 15 minutes. Roll out dough thin and cut with a biscuit cutter, if you don’t have one use a glass.

Uncle Charley’s Hot Sausage Filling:
In a saucepan or skillet place:

1 med. green bell pepper diced in small pieces

1/2 med. onion diced in small pieces
20 oz. package of Uncle Charley’s hot sausage.

Cook until sausage is fully cooked.

Let cool and add about 1 1/2 cups of shredded pizza cheese.

Depending on the size circle you cut from your Pierogi dough add anywhere from a teaspoon to a tablespoon of hot sausage mix to the circle.

Wet the edges of the dough with water, fold the dough in half and press the edges together so they don’t open while frying. Set your Pierogies on a floured baking sheet:  Use up all the dough and filling.

Fill a deep frying pan with oil and heat until hot. Since the filling is already cooked all you have to do is brown the dumplings.  Serve hot with either your favorite tomato sauce or my favorite is sour cream.

BE PREPARED, THEY WON’T LAST LONG.
